Paring Knife (ペティナイフ/皮むきナイフ) – Precision Knife for Peeling and Detail Work

The Paring Knife is a small kitchen knife designed for precision tasks such as peeling fruits, trimming vegetables, and decorative cutting.

Because of its short blade and excellent control, it is typically used for in-hand work rather than on a cutting board. This makes it ideal for peeling, coring, and other delicate preparation tasks.

While Japanese kitchens commonly use petty knives for small general-purpose tasks, paring knives are primarily designed for precise hand work.

MAC knives use a proprietary high-carbon molybdenum stainless steel designed to provide an excellent balance of sharpness, durability, and corrosion resistance.

Chromium is added for rust resistance, while molybdenum improves wear resistance and edge durability. This steel allows MAC knives to achieve a thin, razor-sharp edge while remaining easy to sharpen and maintain.
