Compared with traditional Japanese knives such as the Deba or Yanagiba, the fillet knife is lighter and more flexible, making it ideal for delicate filleting work.

Fillet knives are widely used in Western-style fish preparation.

MAC knives use a proprietary high-carbon molybdenum stainless steel designed to provide an excellent balance of sharpness, durability, and corrosion resistance.

Chromium is added for rust resistance, while molybdenum improves wear resistance and edge durability. This steel allows MAC knives to achieve a thin, razor-sharp edge while remaining easy to sharpen and maintain.
