Misono is a Japanese knife manufacturer based in Seki, Gifu, a city historically associated with blade production. Established in 1935, the company is known for producing kitchen knives that combine Japanese craftsmanship with Western-style blade design. Misono knives are widely used in professional kitchens and are recognized for their consistent quality, balance, and precision.

Deba (出刃) – The Japanese Fish Butchery Knife

Deba is a traditional Japanese single-bevel knife primarily designed for breaking down whole fish. With its thick spine and sturdy construction, Deba knives are capable of cutting through fish heads and small bones while maintaining precise control.

Unlike Yanagiba, which is used for slicing sashimi, Deba is intended for butchery tasks such as filleting, trimming, and portioning fish. The weight and balance of the blade allow clean, controlled cuts without excessive force.

Deba knives typically range from 150mm to 210mm in length and are most commonly used in professional Japanese kitchens. Due to their single-bevel construction, they require proper sharpening technique and experience to use effectively.

For serious fish preparation and traditional Japanese cuisine, Deba is an essential tool.

EU High-Carbon Tool Steel is a high-purity carbon steel manufactured in the EU and used in Misono’s EU Carbon series. As a traditional tool steel, it offers excellent sharpness potential and strong edge retention. While it requires proper maintenance to prevent corrosion, it is highly regarded for its responsiveness to sharpening and precise cutting performance.
