      Fuguhiki knives

      Fuguhiki knives are traditional Japanese slicing knives specifically designed for preparing fugu (pufferfish) sashimi. The blade is thinner and narrower than a standard yanagiba, allowing chefs to produce extremely delicate and translucent slices of fish.

      Because fugu sashimi is traditionally served in very thin slices, the fuguhiki knife is designed to minimize resistance during cutting. This allows the blade to glide smoothly through the fish, preserving the texture and presentation of the dish.

      Fuguhiki knives are commonly used by professional sushi chefs and specialists in Japanese cuisine. With blade lengths typically ranging from 240mm to 300mm, they provide excellent reach and precision for slicing delicate sashimi.
