An astonishingly sharp little knife. The blade cuts effortlessly through any fruits or vegetables. The handle is nicely made and the knife is well-balanced. The knife lacks a bolster but represents an incredible value-I have some traditional Iseya knives in 33-layer Damascus but this guy is almost as sharp.
This is a beautiful and useful knife, extremely sharp. I have several traditional Iseya knives, and I believe the European-style handle and the shape of the blade on this knife will be advantageous for day-to-day work in the kitchen. The knife, just as with the traditional knives in 33-layer Damascus, cuts through vegetables like they were butter.
The knife blade is of the highest quality. I like the traditional design, although this is a small paring knife. My other SETO knives have been durable, easy to sharpen, and always the first knife I grab if I need a really sharp blade for the task that I am doing. Shipping was quick and hassle-free. Highly recommended.
