Sakai Takayuki is a Japanese kitchen knife brand established in 1947 in Sakai, Osaka, a city with over 600 years of blade-making history. Operated by Aoki Hamono Co., Ltd., the brand collaborates with skilled craftsmen in Sakai to produce knives that reflect traditional Japanese forging and sharpening techniques. Sakai Takayuki offers a wide range of knives, from professional-grade carbon steel blades to modern stainless and Damascus constructions, serving both professional chefs and serious home cooks.
Deba (出刃) – The Japanese Fish Butchery Knife
Deba is a traditional Japanese single-bevel knife primarily designed for breaking down whole fish. With its thick spine and sturdy construction, Deba knives are capable of cutting through fish heads and small bones while maintaining precise control.
Unlike Yanagiba, which is used for slicing sashimi, Deba is intended for butchery tasks such as filleting, trimming, and portioning fish. The weight and balance of the blade allow clean, controlled cuts without excessive force.
Deba knives typically range from 150mm to 210mm in length and are most commonly used in professional Japanese kitchens. Due to their single-bevel construction, they require proper sharpening technique and experience to use effectively.
For serious fish preparation and traditional Japanese cuisine, Deba is an essential tool.
SK Steel refers to Japanese carbon tool steel defined under JIS standards. Known for its simple composition and high carbon content, it offers excellent sharpness potential and ease of sharpening. While it requires proper maintenance to prevent corrosion, SK steel is valued for its traditional cutting feel and responsiveness to sharpening.
