Steel:
We combine the best qualities of both stainless steel—which doesn’t rust but tends to lose its edge—and carbon steel—which has excellent sharpness but rusts quickly—by using molybdenum steel (AUS-8), which is both rust-resistant and maintains a sharp edge. To keep the knife’s sharpness over time, it must be hardened; hence, the term “HRC E(Hardness Rockwell C) is often used when describing knives. Inexpensive knives typically have an HRC below 56, and household knives usually range from HRC 56 to 59. With an HRC of 58, this knife is ideal for home use. Although steels with an HRC above 60 exist, making the steel too hard can significantly increase the cost and make the knife difficult for amateurs to handle, with drawbacks such as susceptibility to chipping or breaking if dropped.
Handle:
Laminated plywood is used for the handle—a material that is highly resistant to water and less prone to corrosion.
